Chai– The Crowd Pleaser that also warms the soul with its spicy ingredients.

2 cups of water

2 cups of whole milk (or a preferred milk alternative)

2 tablespoons loose black tea leaves (Assam works well)

2-3 green cardamoms, lightly crushed

1 small cinnamon stick

1 small piece of ginger (abount 1 inch), grated or thinly sliced

1-2 tablespoons sugar (adjust to taste)

Add the water to a medium sized saucepan on a medium heat. Add tea, spices, sugar and simmer together on a medium heat, reduce heat and add milk, increase heat and bring to boil, simmer to “cook” and pour, using a tea sieve when the tea looks strong and rich in colour

Kitchari– A traditional dish used for detoxification and healing in South Asian practices.

 

1/2 of cup of basmati rice 

1/2 of cup split yellow mung daal 

1 tpsp of ghee

1/2 tsp of cumin seeds 

1/2 tsp of mustard seeds 

1/2 tsp of turmeric powder

1/2 tsp of ground coriander 

1/2 tsp of ground cumin 

1 pinch of asafoetida (hing) 

5 cups of water 

Salt to taste 

Fresh coriander for garnish

  1. Rinse the rice and daal thoroughly 
  2. In a pot, heat the ghee or oil and add cumin seeds, mustard seeds, and asafoetida. Sauté until fragrant.
  3. Add turmeric, ground coriander, and ground cumin. Stir well.
  4. Add the rinsed rice and dal to the pot, and stir to coat with the spices.
  5. Add 5 cups of water and salt. Bring to a boil, then lower the heat and simmer for 30-40 minutes until the mixture is soft and porridge-like.
  6. Garnish with fresh coriander and serve warm.
  7. Enjoy as a nourishing and detoxifying meal!
