Chai– The Crowd Pleaser that also warms the soul with its spicy ingredients.

2 cups of water

2 cups of whole milk (or a preferred milk alternative)

2 tablespoons loose black tea leaves (Assam works well)

2-3 green cardamoms, lightly crushed

1 small cinnamon stick

1 small piece of ginger (abount 1 inch), grated or thinly sliced

1-2 tablespoons sugar (adjust to taste)

Add the water to a medium sized saucepan on a medium heat. Add tea, spices, sugar and simmer together on a medium heat, reduce heat and add milk, increase heat and bring to boil, simmer to “cook” and pour, using a tea sieve when the tea looks strong and rich in colour
